Changing the shaft can alter weight, feel and delivery, but it does not change the head’s stated loft. Do not try to bend a driver, fairway wood or hybrid-style head like an iron.

There is no neutral sleeve setting to experiment with. Use the listed factory loft as your reference and compare another factory-loft head if your launch / distance window is wrong.
